Mango Strawberry Pie

Ingredients

2 cups

Spelt flour sifted

1 cup

Ground walnuts

1/2 cup

Date sugar

1 cup

Cold water

2 tbsp

Mock butter

1 tsp

Sea salt

Filling:

4 cups

Diced or cubed mangoes

2 tbsp

Garbanzo flour

1/3 cup

Mock butter

1/2 cup

Date sugar

1/2 cup

Strawberry preserves or fresh strawberries sliced

1/2 tsp

Ginger powder

Instructions

1:

Mix date sugar and walnuts with mock butter, salt and flour until it’s all well incorporated.  Sift this mix again to remove any lumps that came from the walnuts.

2:

Add water slowly, a half cup at a time, as you work the dough. When all water is incorporated into the flour mix you’ll then knead it into a ball. Don’t worry about the dough being lumpy and it may still be sticky so it’s best to wet your hands. Cling wrap your dough and place it in the refrigerator for at least an hour.

3:

Mix all of the dry ingredients for the filling in with the mock butter and blend that down until it’s very smooth. Pour this mix over the mangoes. Cook on medium for 10 minutes covered. Turn off the burner. Save approximately 1 tbsp of the melted butter and date sugar for later use.

4:

Add your favorite homemade strawberry preserves to the mangoes. Mix it in then cover. Let this sit.

5:

Remove dough from the refrigerator. Lightly flour your surface and place dough on top of it and lightly flour the dough. Remove about 1/3 of the dough and set aside in the refrigerator. The remainder of the dough you will flatten out with either your fingers or a rolling pin.

Drape the flatten dough over and into your pie dish. Repair any rips in the dough. After this is done put the pie dish with dough back in the refrigerator for at least 30 minutes.

7:

Take the pie dish out of the refrigerator and put it in the oven on 425 degrees for 10 minutes. While that’s in the oven get the 1/3 piece of dough you removed out of the refrigerator. Prepare your surface with a little flour and flatten out your dough.

8:

Once you’ve flattened out your dough you will then cut your strips for the top of pie.  With your pie crust out of the oven, you will now pour the filling into the crust.

9:

Lay the strips over your pie filling into whatever design you want. Lay them crisscrossing or however. Then fold the pie edges down to cover the strip edges.

10:

Over the top of the pie, brush a little of the date sugar and butter mix. Put the pie in the oven for 40 minutes at 350 degrees. Let it sit to cool off then enjoy!
